YUM! // no-bake avalanche bar recipe

during our last trip to Leavenworth in Eastern, WA we stopped by the Rocky Mountain Chocolate Factory for a treat [as usual] and decided to try something called "Avalanche Bars". they looked like rice krispie treats mixed with peanut butter fudge and m&m's, chocolate and marshmallows. we were NOT disappointed upon the first taste! the combination of textures and flavors compliment each other so well, and after that, I was determined to find the recipe and make them myself. 
with the help of Pinterest, I of course found the exact copy cat recipe! and it's SO EASY! no baking required. the recipe called for chocolate chips, but we liked the version we had with mini m&m's, so that's what I used. and to make them more festive for Halloween, I picked out and used only the orange and brown!

...& here's what you'll need & how you do it!

ingredients //
  • 1 (12 oz) bag white chocolate chips
  • 1/2 cup natural peanut butter
  • 1.5 cups Rice Krispies
  • 1.5 cups mini marshmallows
  • 1/2 cup mini chocolate chips [or m&m's!]
supplies // 
  • medium microwave-safe bowl
  • large mixing bowl
  • mixing spoons/spatula
  • measuring cups
  • microwave
  • small glass pan
1 // start by dumping your bag of white chocolate chips into a microwave safe bowl. then add peanut butter on top of the chips.
2 // set aside. then in your large mixing bowl, measure out Rice Krisipies and mini marshmallows and toss together.
3 // microwave white chocolate and peanut butter mixture on 30 second intervals and stir in between until it is all combined and smooth!
4 // grease your glass pan with cooking spray and set aside. let the white chocolate peanut butter mixture cool slightly before pouring it over the rice krisipies and marshmallows and mixing it all together. you don't really want the marshmallows to melt!
5 // once cooled and combined, add the mini m&m's or chocolate chips into the mixture. I like the m&m's because it adds a little color!
6 // when it's looking yummy and mixed together, spread out into the glass pan evenly. the bigger the pan, the thinner the bars, so I prefer a smaller pan so they are a bit thicker like the ones Rocky Mountain sells ;)
7 // place in the refrigerator for at least 30 minutes, then cut into squares, serve and enjoy! if you aren't addicted after one bite... we need to talk.
