weekly snaps + a yummy recipe!
this week: kaitlin & i are learning how to manage a blog while working full time jobs.

I am in the midst of the start of wedding season craziness. this week i will be in raleigh, north carolina for a wedding.
have any of you been to raleigh? would love recommendations for any coffee & lunch spots!
as spring is coming to an abrupt end, i would like to encourage everyone to literally stop and smell the cherry blossoms.
i find myself trying to live in the moment. taking each flower, warmth of the sunshine, cool walk in.
yesterday i whipped up one of my favorite recipes: basil, tomato & goat cheese quiche.
last year i had my own blog that i shared my favorite recipes & encouraged my readers to pursue a healthy lifestyle. (a fond life)
i made a video with this recipe & i hope you all try this simple recipe!
one frozen or pre made crust
three eggs
1 1/2 cup of half & half
one tomato
three leafs of basil (or however much you prefer)
1/2 a cup of goat cheese
preheat at 325
beat eggs, then add half & half (add salt & pepper to your liking)
slice up the tomato & add to the bottom of the pan
then do the same with the goat cheese & basil
(if you have left overs i always throw it into the egg& half & half batter)
then pour the eggs & half + half into the crust
bake for 45-60 minutes
then cool for 15 minutes
then enjoy!
yesterday i added vegan italian sausage which i highly recommend! happy snapping & eating!
now i am off to make some coffee & listen to my book!
